Stir to prevent sticking for approximately 8 minutes, until all liquid is removed. Add spinach, cover, cook for about 5 minutes until spinach is just wilted. Whisk eggs in mixing bowl. Add cheese and eggs to pan containing cooked vegetables and stir gently to mix. Turn heat to low. Place sliced tomato on top and cook uncovered for about 10 minutes, until only slight amount of juice remains. Place under grill for 3-5 minutes until set. Slice and serve with salad or steamed fresh seasonal vegetables drizzled with a little extra virgin olive oil.<br />Roasted Mediterranean Style Leg of Lamb With Artichokes. (Serves 10.)<br />This is a great example of a Mediterranean recipe, featuring such traditional Mediterranean foods as lamb, garlic, and artichokes.<br />Ingredients:<br />4lb leg of lamb 1 tspn oregano, chopped finely 1 tspn pepper 2 tspn salt 1 garlic clove, minced 8 oz, or 1 cup of tomato passata 1 cup, or 250 ml, water 9 oz artichoke hearts, tinned, marinated, or frozen<br />Method:<br />Heat oven to 325º F. Rub the combined oregano, pepper and salt into the lamb. Place lamb on rack in shallow baking pan. Bake in oven for 2 1/2 hours. Remove lamb and baking rack from oven. Drain fat from baking juices and place lamb back in pan without the baking rack. Combine garlic, passata, and water, and pour over lamb. Place sliced lemon over top of lamb. Place artichokes around lamb in baking dish. Bake for another 30-60 minutes, basting occasionally with sauce, until meat thermometer reaches 175-180º F. (Serves 4.)<br />Ingredients:<br />2 cucumbers, peeled and chopped or sliced 3 tomatoes, chopped 1 Spanish onion 4 teaspn fresh lemon juice 1/4 cup extra virgin olive oil 1 1/2 teaspn oregano salt and pepper as desired 8 pitted Kalamata olives, chopped 1 cup feta cheese, reduced fat, crumbled<br />Method:<br />Combine cucumbers, tomatoes, and onion in appropriately sized salad bowl. Combine lemon juice, olive oil, oregano, salt and pepper. Drizzle over salad. We wondered why people in Mediterranean countries had lower cancer rates and healthier lifestyles than we did. Researchers found, though not indisputably, that there was a link between this olive oil-heavy diet of seafood and health. The Mediterranean diet has been found to contribute to lower rates of: multiple cancers, heart disease, type-2 diabetes, Parkinson's disease and Alzheimer's, among others.</p><p>In actuality, the diet we consider "Mediterranean" refers not to the whole geographical area, rather to coastal Greece, Crete and southern Italy of the 1960s. While those areas still eat in a similar fashion, our concept of the diet is based on what the poorer people of that particular era ate. The diet consisted of heavy amounts of olive oil, fruits, vegetables, fish, legumes, nuts and whole grains. It also contained moderate amounts of cheese, yogurt, poultry and wine.</p><p>The best way to see if the Mediterranean diet will work for you is to give a dish a try. One thing is for sure: It will beat the heck out of another night of take-out or fast food. Obviously, getting enough fruits and vegetables is always important. However, give this recipe a try so that you can experience the correlation between olive oil, seafood and health.</p><p>Mediterranean Mahi-Mahi<br />Servings: 4<br />Pre-heat: 450°</p><p>2 tsp. extra-virgin olive oil<br />1 large onion (or 2 small), thinly sliced<br />4 tbsp. dry white wine<br />2 cloves garlic, finely chopped<br />2 cups diced tomatoes (canned is easiest)<br />8 Kalamata olives, pitted and chopped<br />1/4 tsp. dried oregano<br />1/4 tsp. orange zest (fresh)<br />1/2 tsp. salt<br />1/2 tsp. pepper<br />1 lb. thick-cut Mahi-Mahi fillets</p><p>Place the olive oil in a non-stick pan on medium-high heat. Lightly brown the sliced onion(s), which should take about 3 minutes. Add the garlic and white wine. Allow to simmer for 30 seconds. Add olives, oregano, tomatoes and orange zest. Add ¼ tsp. of salt and pepper (specified amount or to taste).</p><p>Season the Mahi-Mahi with the remaining ¼ tsp. of salt and pepper. Place the fish in a regular-sized baking dish. Coat the fish with the mixture from the pan. Bake for about 10 to 20 minutes, until the fish is just cooked through. Be careful not to overcook.</p><p>As you can see, it's not hard to eat healthy. You don't even have to adhere to the Mediterranean diet, but it wouldn't hurt to have a Mediterranean-style meal every now and then. The Mediterranean diet is full of fresh fruits and vegetables, lean proteins (poultry, nuts, and lots of fish), whole grains, and healthy fats, like olive oil. Sweets and foods high in fat are avoided as much as possible. The caloric intake for this diet is generally between 1,500 and 1,800 per day. Only about half of these calories are attributed to carbohydrates.</p><p>Extraordinary results were noticed when the diabetics combined the diet with regular exercise. After several years over half of the group was able to manage their diabetes without any drugs whatsoever. Major weight loss as well as lower cholesterol levels were noted also. Their blood glucose level was now under control and they were at much lower risk for heart disease.</p><p>The other group of overweight volunteers were ask to follow your typical low-fat diet for the same amount of time approximately 4 years. Their cholesterol and triglyceride levels only saw minor improvement.</p><p>The extraordinary thing is that these two diets were not vastly different. Both are full of fruits and vegetables and low in fat. Yet the results were so radically different! So, the question is, why? Some feel that it could be the drastic cutting of carbs, while others think that maybe incorporating olive oil into their diet helped the body improve their insulin levels. Olive oil is a great replacement for butter or margarine because it decreases your intake of saturated fats. This in turn lowers your blood glucose levels, cholesterol and triglyceride (HDL). Now you are ready for some true pizza fun.</p><p>For Greek pizza, lightly spread ricotta cheese, top with chopped tomato slices, sliced black olives and spinach. Sprinkle lightly with shredded mozzarella, and feta cheese for a delightful and nutrient rich white pizza. Bake at 475 degrees for approximately 20 minutes (watch for crust and cheese browning),</p><p>For an Italian twist, replace ricotta cheese and spinach with a light marinara sauce with mushrooms and add garlic to taste.
